Renowned Chef Grant Achatz practices a style of culinary art called molecular gastronomy. Familiar items are deconstructed and reassembled in unfamiliar ways, often requiring specially designed delivery systems. Fragrance is a key component, taking the form of burning spices, pillows filled with scented air, or smoldering leaves. Some dishes come with instructions. The menu changes with the seasons, but recent examples include a sensational truffle and potato appetizer; perfect halibut with artichoke and vanilla foam; an exquisite kobe beef dish with cucumber; a stunning combination of squab breast, squab tenderloin, and squab confit; and, for dessert, a pliable chocolate cream with umeboshi plum sorbet. Not every dish delights every diner, but the overall experience is extraordinary.
