No one, least of all the Dylan Hotel, was sorry to see the last of Nyla, Brittany Spear’s puff piece of a restaurant. In its place moved the Chemist Club Grill, an elegant, manly restaurant that far better fits the image of the posh Dylan. The impressive dining room and bar feature soaring ceilings, rich, red walls, and a working fireplace. Brace yourself, though, for the high prices, which may explain why often it seems like only the expense-account set is here. Still, the New American fare is top-notch. Start off with fresh oysters, either “naked” in the half-shell, or “dressed” with morel mushrooms, Madeira and cream, then dig into the substantial entrees, such as the roasted rack of lamb accompanied by asparagus with parmesan crust, veal chop with dried cherries, and a 25-oz Porterhouse steak for two.
