If you asked around, you might not think the people in Nashville are very creative because most all of them would name Calypso Café among their favorite local restaurants. And, once they’re there, most of them would order the same thing: the Cuban Black Bean Salad. It’s piled high with white meat chicken, cheddar cheese, sour cream and a special sweet salsa. Or they’d go for the rotisserie chicken, warm, crumbly coconut muffins, a pile of sweet potatoes and a spoonful of steaming mustard greens, washed down with a glass of fruit tea. Most meals have under seven grams of fat, but no one would know it. If you take the locals’ suggestion, you’ll have plenty left over for lunch the next day, and you’ll get out for about $8. That is, unless you leave a nice tip, which you should, because the waiters are friendly, if frantic, and they’ll run around like crazy to get your food out quickly.
