Instead of sauntering down Parisian boulevards and stopping at an adorable brasserie for a light repast, now you can, well, saunter down the corridors of the Wynn. You don’t need a Michelin guide to tell you that pretty much anything James Beard Award-winning chef Daniel Boulud comes up with is going to be exquisite. If you’ve grown to love Daniel in the former Mayfair Hotel in New York, you’ll find the same love of fresh local ingredients exhibited here. Boulud teams with executive chef Philippe Rispoli, and their shared vision reflects their French roots while reinterpreting brasserie classics. Candlelight, antique windows, and the lovely rose-colored glass separating the kitchen from the dining room create a light and open atmosphere that’s inviting and elegant without being stuffy. If you’re lucky (or you make a reservation in advance), you may be seated at the outdoor patio overlooking the lagoon. There is no excuse for not trying the four types of caviar Boulud offers. If you don’t care for caviar, sample the succulent grilled lobster. If you eschew all food that comes from the ocean, try the artichoke barigoule. Don’t worry about overindulging – Boulud’s dishes are satisfying but rarely heavy.
