The buckwheat noodles have been a staple in Japan for nearly 400 years, where chefs will train for years to learn how to properly make the dough and roll them. Honmura An’s chefs are on par with the best of them, serving up some of the finest noodles in New York. Start off with cold soba – the ideal temperature to taste the earthy texture of the noodles – such as noodles enveloped with scallions and bonito flake tuna.
