Not so at Jean-Georges Vongerichten’s eponymous restaurant in the Trump International Tower, where the stellar French nouvelle cuisine hasn’t suffered an iota since it opened in 1997. And Monsieur Jean-Georges has not been letting grass grow under his feet. Far from it; his expanding culinary empire now includes Vong in Midtown, Mercer Kitchen in SoHo, and Spice Market in the Meatpacking District, all of which have been garnering praise from foodies and critics alike. Nonetheless, there’s no doubt that Jean-Georges is his baby – and not just because it shares his name. The sleek interior, with soaring windows overlooking Central Park, is the perfect backdrop for the phenomenal dishes, which seem to epitomize Vongerichten’s philosophy in the kitchen. He keeps it refreshingly simple – meats and fish are often cooked whole and on the bone to maintain their juices – while introducing vibrant new flavors, many of which emerged from his experiments with wild edible plants including nettles, chickweed, and garlic mustard.
