Sui’s kitschy underwater decor – lights dance against a blue wall to simulate the ocean depths – becomes more credible in the ample dining room, where colorful fish with bulging eyes and fluttering tails swim languidly in large aquariums embedded in the walls. Sui is still evolving: Is it a stylish sushi restaurant, a sultry lounge, or just another quiet bar on Spring Street? No one, least of all the newbie staff, seems to know, but this lack of identity can be a good thing. Sui is still well beyond the radar of the NoHo crowd, so during the week, you can often have the bar to yourself, and on the weekends, it’s mostly an eclectic bunch refreshingly unconcerned with the fickle ways of fashion or how much money you make.
